Carnival buns
delicious fluffy carnival buns with creme and chocolate.
INGREDIENTS
- Buns
- 1 cup + a splash of Milk
- 2/3 cups cold water
- 40g fresh yeast or 1 pack of dry yeast
- 3 teaspoom sugar
- 2 eggs (1 for the dough + 1 til pensling)
- 600g wheat flour
- 1 tablespoon durum flour (not
necessary) - 1 teaspoon cardamom
- 8 g salt
- 25 g soft butter
vanilla creme
- 2 eggyolkes
- 2 tablespoon sugar
- 1,5 tablespoon cornstarch
- 1 teaspoon vanilla sugar
- 3/4 cups milk
filling and decoration
- chocolate (chopped)
- powdered sugar
- water
- cacao powder
- dried flowers
FREMGANGSMÅDE
- crumble yeast in a bowl, put water and milk in the bowl.
- add sugar and stir until the sugar is dissolved.
- add egg, flour, durum, salt and cardamom and knead the dough until it is smooth, supple and releases the edges in the bowl (5-8 min).
- cut the butter into small pieces and knead it well into the dough.
- put the dough in a bag or cover it with cling film and put a tea towel on top, let it rise for 40 minutes at room temperature.
- when the dough has risen, roll it out into a square and divide it into squares.
- put 1 teaspoon of cream on each square and fold the corners in over the middle.
- Let the buns rise for 30 minutes.
- turn on the oven at 220 g top/bottom heat, beat eggs and brush the buns.
- bake the buns for 12-15 minutes until they are golden. Let the buns cool and add some glaze.
Vanilla cream
- put egg yolks, sugar, cornstarch and vanilla sugar in a saucepan and whisk it together until smooth.
- add milk and turn on the stove on medium heat and whisk constantly until the cream starts to thicken
- remove the cream from the heat and cool it down before putting it in the buns.
